How to Store Zefir

This blog post is mostly for people who have never heard of zefir and are trying to figure out how to store their treats, or for those who are learning to pipe zefir. Whether you choose to pipe intricate designs or create classic zefir swirls, there are common recommendations and observations when it comes to storing homemade zefir.

Here are a few factors to consider:

1. The Size of Each Piece

Size matters. Smaller pieces, like 1-inch diameter tulips or mini swirl samples, will dry out faster than medium-sized flowers and standard swirls. The smaller the piece, the quicker it loses moisture.

2. The Environment

In normal conditions with medium to low humidity and room temperature between 19 - 22°C (66 - 72°F), zefir won’t really go bad - it will simply dry out. As it dries, it develops crispy, brittle edges and a denser, chewier texture overall. Some people actually enjoy it this way.

However, in more humid conditions, zefir can be prone to actual spoilage. The powdered sugar reacts with the fruit and egg-white-based mixture, creating a sticky surface that is more vulnerable to mold and spoilage.

Humidity is the real enemy.

3. The Purpose of Storing

As zefir flower producers working with volume, we’ve learned that once zefir is sugar-dusted, there is a short window during which the petals remain flexible for arranging.

If zefir has been sugar-dusted and then stored in an airtight container at room temperature - or even in the fridge overnight - the petals tend to become brittle. This makes arranging flowers much more difficult without damaging their presentation.

Our Recommendations

General Storage Guidelines.

You can use the same approach when storing finished zefir arrangements.

1. We recommend storing properly set and sugar-dusted zefir at room temperature in an airtight container and consuming it within 7–10 days.

For smaller pieces (like mini tulips), 4–7 days is ideal.

2. Well-set and sugar-dusted zefir can also be stored in an airtight container in the refrigerator for:

• Up to 2 weeks for small pieces

• Up to 1 month for medium-sized pieces

Just make sure the container stays completely dry and sealed so no moisture can enter.

3. In the freezer:

• Up to 3 months for regular-sized pieces

• Up to 1.5 months for small pieces

How to Store Zefir Flowers So They Remain Flexible for Arrangements

Here is the real-life hack we discovered — and absolutely love.

Let the zefir set properly after piping. This usually takes 12 hours (overnight) to 24 hours.

Instead of sugar-dusting immediately:

1. Place the fully set zefir into an airtight container.

2. Store it in the fridge for up to 5 days.

3. When ready to arrange, remove the container from the fridge.

4. Open it and allow the zefir to come to room temperature (about 15 minutes).

5. Sugar-dust as usual.

6. Let it sit for another 30 minutes.

7. Arrange immediately.

This method keeps the petals much more flexible and easier to work with.

How to Thaw Frozen Zefir

Zefir doesn’t freeze solid in the traditional sense.

If stored in the freezer, remove it, open the lid and allow it to come to room temperature for 20–30 minutes.

Once it reaches room temperature, it’s ready to enjoy or to be sugar-dusted.
