Tips on Piping Zefir Flowers: What Nobody Tells You Before You Start

If you’re curious about piping zefir flowers, or floral piping in general, there are a few important things every beginner should know before starting.

One of the biggestmisconceptions about zefir is that it should behave like regular meringue. It doesn’t. Zefir is a fruit-based confectionery that requires proper handling, temperature control, and consistency management. Learning how to work with the mixture is just as important as learning the piping itself.

Here are a few beginner tips we share with our students:

  • Keep your zefirmixturecovered to maintain warmth and pipeability

  • Mix the zefir vigorously before refilling your piping bag for a smoother texture

  • Always keep the thinside of your piping tip facingup

  • Rotate your flower nail as you pipe to create cleaner petals

  • Wipe your piping tip frequently for more defined flowers

  • Use gel or water-based food coloring — oil-based coloring will ruin zefir

We also teach two different peony piping techniques using both curved and straight piping tips. Curved tips are usually easier for beginners, while straight tips allow for more elaborate flower designs as your skills develop.

Another important detail many beginners overlook is setting and storing zefir flowers properly. Timing your sugar dusting correctly and storing flowers in airtight containers helps prevent brittle petals and broken arrangements.
